Callalloo Recipe from Jamaica

Ingredients

1 bunch callaloo ( or spinach).fresh, chopped
2 ounces salt pork, chopped
8 ounces coconut milk
5 cups water
1 large onion, finely chopped
3 cloves garlic, minced
8 ounces chopped okra
8 ounces crab meat
2 cloves garlic
scotch bonnet to taste
salt, pepper to taste

Directions

  1. Place ingredients in a large stew pot except okra, crabmeat, and spices.
  2. Simmer until the salt pork is tender then add the okra and crab meat.
  3. Simmer for 5 minutes and season with salt, pepper, and scotch bonnet.

Preperation time = 35 minutes; serves 6 people
